Did a 6-hour move-out clean for a landlord. She paid the $150 deposit through the Bubba portal, signed the agreement, the whole thing. Just sent the invoice for the remaining $340 and she texted back "I never agreed to that, I thought the whole thing was $150." I literally have her signature on the agreement. What's the actual next step? I don't want to lose it but I also don't want to get steamrolled like last time.

Take a breath. You're in better shape than you think. Reply once, in writing, calm. Attach the signed agreement. One sentence: 'Per the agreement you signed on [date], the balance of $340 is due within 7 days. Happy to set up a payment plan if helpful.' Then stop replying to the emotion. If she ignores it, send a formal demand letter (the template is in your Bubba docs folder). Georgia small claims handles up to $15k and you don't need a lawyer. I've done it twice. Won both. The paper does the work.
